Spray a large frying pan with low-calorie cooking spray and heat over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant.
Add the mince to the pan, breaking it up with a wooden spoon and cook until browned, ensuring the meat is fully cooked through.
Make the Sauce
Reduce the heat to medium-low. Add the sesame oil, ginger purée, sriracha, honey, light soy sauce, apple cider vinegar, and chilli flakes. Stir well until the beef is evenly coated.
Add the tender stem broccoli and red pepper. Cook for 5 to 7 minutes, stirring regularly, until the vegetables are tender with a slight bite and the sauce has thickened.
Cook the rice according to packet instructions. Place the rice in a bowl or plate, top with a portion of the firecracker beef, and garnish with spring onion and red chilli.
